                                                                                    Sunrise (Mango Ring with Strawberry Glaze, serves about 10)

Material: 1 package Mango DoFu Delight®; 3 cups water*; 1-1/2 cups milk**; 1 container strawberry glaze; Fresh strawberries and  mango. (1 cup = 8 fl oz (250 ml)


Method:
Mix 1 package Mango DoFu DoFu Delight® and water.  Stir and heat to a gentle boil for 15-30 seconds.  Remove heat, then add milk and mix well.  Pour liquid into a bund cake pan sprayed with non-stick cooking spray.  Refrigerate for 1-2 hours or until set. Take out when firm, put pan in warm water about 1 to 2 minute.  Moisten tips of fingers and gently pull DoFu jelly from edge of mold.  Put plate on top of cake and flip upside down, shake lightly until mold comes out.  Cut strawberries in quarters and mango in cubes.  Fill fruit in center of mold.  Pour strawberry glaze over fruit.  Serve.

*Amount of water may vary within 1/2 cup. More water gives softer gel; less water, firmer gel.
**Milk may be replaced by same amount of Soy milk or water (for a clear jelly).
