DoFu Delight® Fancy Recipes 4 -  Fresh everyday !

            Tropical Punch Float (DoFu Delight® Float, serves 10 - 30, excellent refreshment for a party gathering)

Materials: Depends on the color mix you like, choose 1 package of each desired DoFu Delight® flavor/color. (White - Almond or Coconut;   Yellow - Mango; Green - Honeydew; Pink - Strawberry) For each package of DoFu Delight®, ready 3 cups of water and  1-1/2 cups of milk**. (1 cup = 8 fl oz (250 ml))  
Method: 1. For each package of DoFu Delight®, prepare as follow:  Mix content of one package of DoFu Delight® with 3 cups of water* in a saucepan. Stir and heat to a boil.  Remove from heat, add in milk and mix well. Carefully transfer the hot liquid mix into a flat-bottom baking pan. Allow to cool to near room temperature, then refrigerate until set.
2. Cut each DoFu Delight® jelly into to small cubes and mix into a punch bowl. Float the jelly cubes with chilled fruit punch or pulp-less fruit juice of your choice. (Tip:  for less sweet float, the fruit punch and fruit juice may be diluted with cold water.) Small ice-cubes may be added to keep chill. Serve in appropriate bowls or cocktail glasses with optional garnish.
*Amount of water may vary within 1/2 cup. Less water, firmer jelly (preferred); more water gives softer jelly.
**Milk may be replaced by same amount of water for a clear jelly. Or, For a sweeter jelly, replace milk with your desired amount of sweetened condense milk. Or, Replace milk with non-dairy creamer & equivalent of water to avoid lactase. 


                          Jade Spring  (Crystal Honeydew Jelly Cup, serves about 10)

Materials: 1 package of  Honeydew DoFu Delight®*; 4˝ cups of water**; Whip cream or Cool Whip; one can of tangerine.   (1 cup = 8 fl oz (250 ml))  Note: This can be applied to other DoFu Delight® flavors.
Method: Mix the content of the DoFu Delight® and 3 cups water. Stir and heat to a boil.  Remove from heat, and then mix in 1-1/2 cups cold water.  Pour mixture into serving cups.  Set aside until begins to set.   Insert tangerine slices in  mixture.  Refrigerate until set.  Top off with whip cream and garnish with additional tangerine slices.  Serve.

*Other flavors can be prepared the same way for a different unique treat!
